In my admittedly limited experience with PG's, I've never heard of ATF 
turning gray---perhaps those with more experience finds this common.
I have learned that PG's are tough horses.  They put up with a lot of abuse. 
If you've already gone as far as to pull the converter and pan.....
even if you've never rebuilt a PG (I have) and you really don't want to, 
hoping that the friction rings and spacers in the clutch pack aren't too 
worn,
I would recommend at least replacing the pump seals and all other relevant 
seals that do not include a complete tear down of the transmission.
Also, removing and cleaning out the valve body wouldn't be a bad idea, 
various seals could be bad or missing, check balls not moving due to being 
gunked up, etc.

Just my humble .02  Bob Ballew gave us some good guidelines, perhaps saving 
us trouble down the road and requiring another PITA engine/transaxle 
removal.
