Okay - When it won't start, what do you do? Have you checked for spark - at that exact point in time?  Pull the coil wire off the cap center and hold it near a ground, and crank. If you find a good spark, have you looked down the carb to see if you have a pump-shot out of the accelerator discharge. If you have a good spark, and fuel out of the pumps, it should start.

I have a 65 Monza 110 Automatic with an electric fuel pump and regular points ignition.  When it isn't started for a week, It will crank, but won't start immediately.  If I let the fuel pump run for 5 seconds, no start.  Run the fuel pump for 15 seconds, no start,  1 minute, no start, 2 minutes, no start.  After attempting this routine, I let the car sit for 2 hours, then it starts right up and runs within 3 seconds and runs great. It stars right up again after it has been running but if I shut it off for 10 minutes, like when filling up at a gas station, it cranks but wont start.  Let it sit for 10 to 15 minutes, sometimes a while longer, it usually starts.  It has new points, plugs, Spark plug wires. Any Ideas?
