 This would be a great way to make different thermistors work. The curve may not be spot on, but it will be repeatable. 

Another way is to build a 'voltage follower' using an op amp, preferably a CMOS version such as http://www.ti.com/general/docs/lit/getliterature.tsp?genericPartNumber=OPA725&fileType=pdf

Note CMOS op amps can get much closer to the + and - supplies than bipolar amps. Which, for max/min reasons, it's desirable.

Add a pot from the thermistor to switched +12v, and you can then adjust the resistor to get the output you want.

but still - adapting a gas gauge or oil pressure gauge to a different
