Hello Bryan,
The heavy rings on your Greenbrier's rear bumper should be fine if they and the frame rail they are bolted to aren't rusted through.
For the LM you can winch it on using the lower control arms as you've got the suspension braced. For the tow I'd chain the frame rails on each side like I did on an engine less '65 using the holes Fisher body left us (hopefully still filled with rubber plugs).
Two towing companies have dropped cars on me in the past by just hooking onto the drive shafts or some other part not connected to the structure of the car.
I'm sure others have their own tried and true solutions.
