There seems to be some confusion concerning your meaning of 'runs fine' and 'warms up / nowhere near as smooth.'
'Runs fine' right after it is started and you are first driving down the road? Or while it is on cold idle in your parking place? Is the cold idle keeping the engine RPM high enough to make the engine appear to 'smooth' out? Does your reference to 'nowhere near as smooth' mean engine vibration both at idle and running down the road? Corvairs are known for having wear problems with the distributor advance plate. Have you checked the timing with a timing light? If the timing mark is anything less than steady the idle may be affected.
Have you ruled out vacuum leaks ... particularly at the choke pull offs and the balance tube? Secondary ignition wire leaks / distributor cap / rotor cap? Tested the coil? Has the cooling fan pressure blown off a spark plug wire?
By 'nowhere near as smooth' do you mean it hesitates / stumbles / responds poorly to the throttle / misfires, vibrates as you are driving down the road? Or any of these conditions standing still at an idle? Is it most noticeable in first gear or third / fourth ... if there is a difference? Does it feel like it is running out of gas? Are you seeing black smoke [flooding] from the tailpipe?
If it is still a problem after checking all these points it may be time to run a compression check. Burned valves and / or holed pistons happen in an instant. Either will most likely affect the 'smoothness' of the engine's performance.
