Here is a source for possible consoles for Corvairs. 

Never thought about Corvair's  you do have a lot of floor. The only console that may work is the Custom Console. Designed for flat floor vehicles 50's pick up I make it narrow for 60's cars with original bucket seats. Measure from dash to floor the console is 19" high and 5 1/2" between seats.
