<VV> Head Temp Gauge(s) for Corvair @ 500+ degrees ?

 One can have too many gages. Personally, one should suffice. For sure, on turbo cars, one is enough. Now, if you have major carb sync issues, one side will run hotter than  the other, etc., but almost without exception, you'll know something's wrong without a second gage.
