Actually the factory thermistor location right at the back of the combustion chamber is the hottest part.  One of the Chevy test papers shows a temperature map of the head.

What's probably the most common means of installing the current temp sensors that isn't under the plug is to simply bolt them where the snap switch or thermistor goes.  That will give an acceptable way of seeing if the temp is out of range although the absolute value may be off.  See the link I posted previously for a more elegant solution that Seth wrote up.
