Maybe because a higher voltage spark has more energy?

Something I've never understood -- a spark plug disigned to fire at a
lower voltage. Why does eveyone want a hotter ignition the negate that
by running a low voltage spark plug?
Well, there are reasons, but none of them relate to "performance", as
commonly defined.
