I'm in the process of doing exactly the same thing to my 66 coupe. I stripped half of the car mechanically, sandpaper and scotchbrite type wheel and half the car with chemical paint stripper from a spray can. The chemical route was significantly easier to clean up. The sanding dust was everywhere in my garage! I did cover stuff with plastic sheeting, but not at first (a classic Homer moment).
