Hardly anyone uses copper for over 30 amps. Aluminum is just fine, and
unlike aluminum Romex, those setscrew connectors do NOT give problems.
Personally, I think 60 amps is plenty. I mean, what are you going to run out
there?

Well, the supply to that panel can get expensive with today's prices for
copper and how far you have to run it, but remember, like horsepower,
more is better! Just a matter of how fast can you afford to go ...
