The clutch cable snapped at the linkage under the dash, the 65 monza coupe
is now sitting at a supermarket about a mile away. Is it possible to start
it in 1st gear and drive it home slowly (maybe jamming it into 2nd gear once
and keeping it there until I get home), so that the car doesn't get towed
tomorrow?

Start it in 1st, then CAREFULLY get off the gas and shift to 2nd; repeat
for 3rd and 4th.
I had this happen to me in Zion National Park on a Sunday; what do you think
my chances of finding a Chevy dealer or a FLAPS open on a Sunday in Utah
were? But I made it from Zion to Salt Lake City by nightfall.
