Harry, I wouldn't recommend metallic brakes for a person who isn't "in touch" 
with their machine.  I ran metallic shoes for years and found that the first 
"cold" stop required much higher pedal pressure and for the next couple of 
stops after that, the vehicle would pull to one side or another.  The situation 
was worse if the vehicle sat for a month or more.  I wouldn't hesitate to put 
organic linings in for the planned usage.
