Matt, in addition to what Paul Fox and Ryan Counterman said about dropping 
valve seats and hydrolocking the pistons, another BAD outcome of pouring 
water down the carbs is that it tends to wash the oil off of the cylinder 
walls and can cause tremendous wear or damage to the cylinder walls and 
piston rings.  If you feel you must pour something down the carbs, make sure 
it has some lubricating properties such as the GM top cylinder lube or 
Wynns.  The principle of pouring liquid down the carb is to cause a thermal 
shock to the carbon build-up on the heads and pistons.  This same thermal 
shock is what can cause the valve seats to shrink and drop.
