If you are not trying to make this thing stock anyway you are better off not putting the wheel trim back on or using 66-69 style. 65 has LOTS of pieces and is quite rare as NOS so it usually goes on a show car. The 66-69 is easier to find and is less as a repro than the 65.
The Corsa Comunique had a good article on using the Sebring seats. Was awhile back , but I think you can search it as alot of the past Comuniques are availible on the Corsa website. That article goes through what year seats to look for and what to look for. Alot of what you would find in salvage are in not great shape, but you can get them recovered, easier that way. Especially if they are not the color you need.
Gary Segal in the Baltimore Club (Ellicot City) put a set in His 63 Spyder Convertible.
They look less goofy when they are in a convertible. Easiest way to do a 3 point in the convert. In a seadan you have somewhere to fasten it.
Greg Walthour did a great job putting a 3point set in the front of Red Brier.
Is all of your trim messed up? What pieces do you definitly have to have.
You should also check Mr Widmen's website from Bolivia on how he restored his 1960 Corvair trim. Yours may be good enough to fix, especially if you are patient and do it your self.
